Season for pumpkins is one of my favourite seasons.
I love taste of pumpkin cakes, muffins, soups. Powerful orange colour of
pumpkins gives me extra positive energy for a day. Since I had a chance
yesterday to buy a wonderful butternut pumpkin directly from a farm, today I would
like to share with you a recipe for roasted pumpkin. Perfect meal for two
people- great lunch idea.
Ingredients:

1 butternut pumpkin

1 tablespoon of oil (ex. olive oil)

1 teaspoon of turmeric powder, cinnamon and cayenne
pepper

salt and pepper to taste + black sesame seeds to decorate
How to do it?
Preheat oven to 180 degrees. Cut butternut pumpkin
in half and scrape out seeds. Then cut pumpkin in smaller pieces. Drizzle
pumpkin with oil and season with spices. Place pumpkin pieces on a baking
sheet. Roast around 40 minutes (until pumpkin is soft). I served
my pumpkin with cooked beetroot.
